They say that if you were to only eat one fruit again, to make it blueberries. Nutrient dense and your ticket to longevity, their dark purple skin is a dead give away of their high anti-oxidant properties. And, when it comes to cancer fighting foods, they are the crusaders. We all know they’re delicious added to a fruit salad or eaten frozen like little lollies, but have you ever thought of adding them to Avo toast? It’s a cute little idea for a light snack or a late night desert. Best eaten on Spelt or whole grain toast. And, to really increase your super powers, try to buy blueberries organic. They’re part of the Dirty Dozen, meaning they’re heavily sprayed and directly to their skin. Blueberry & Avo Toast

Ingredients
Serves 1
2 Pieces of Spelt Bread, lightly toasted
1/4 avocado (spreadable)
Handful rocket
2 Handfuls blueberries
1-2tsp olive oil
Squeeze of lemon juice
Pink Himalayan Sea Salt to taste
1/2tsp Sumac (optional)
Directions
1. Lightly toast spelt or whole grain bread. Top with rocket, finely sliced avocado and a light drizzle of olive oil. Sprinkle with blueberries, sea salt and sumac (optional). Enjoy xx
