Just as its title promises, this humble little Nourish Bowl does exactly that. Greens have you covered when it comes to a wide avariety of vitamins and nutrients. Whole grains provide you with fibre and together with good fats (avocado) a good amount of sustainable energy. Add to the equation Nori for some Sea Minerals. Plus, who would have thought, kale and sesame seeds are both an awesome vegan source of calcium, essential for our womanly bones, especially through the child bearing years. Pack it up and use the Nori to make up miniature sushi rolls or take a moment to just for you, to stop and nourish yourself at home xx
Nourish Bowl with Sesame Brown Rice Nori & Greens

Ingredients
(Serves 2)
Half a head of broccoli, chopped
Handful green beans chopped
1 bunch asparagus chopped
3-4 kale leaves, torn from stem
Half a lemon juiced
2 cups of cooked brown rice
1tsp sesame oil
1tsp rice wine vinegar
2tsp sesame seeds
Half an avocado sliced
Pickled ginger to taste
Sea salt to taste
Dressing
2tsp miso paste
2tsp honey
2tbs rice wine vinegar
1tsp sesame oil
splash of lemon juice
Directions
1. Begin by blanching broccoli, green beans and asparagus. Place in boiling water for 1 -2 min then drain and rinse thoroughly under cold water. Set aside.
2. Divide the kale between 2 serving bowls, dress with lemon juice and massage until the leaves begin to wilt and turn a vibrant shade of green.
3. In a small bowl combine the brown rice, sesame seeds and sesame oil, mix to combine. Divide between the two bowls. Then top each bowl with blanched veggies, nori and avocado.
4. In a small mixing bowl, combine all the dressing ingredients, quickly whisk together until a smooth dressing forms. Dress each nourish bowl and top with pickled ginger, sesame seeds and sea salt to taste xx
