You know when you see a Mummy Blogger or Recipe Creator post a Recipe and you think to yourself, gosh, I wish my kids ate like that? Well, I just want you to know, that is not the case here. I literally made this amazing soup, it is so delicious, like seriously yum, the lentils give it that next level, really good soup vibe, and no one ate it. Not the husband, not the kids, not even my little one who takes after me with the love of vegies. I’m not complaining, because I know one of them will eventually love it (especially if I make the effort to puree it) but my point being, sometimes, a good soup is just for us. Sometimes, it’s just the grown women who are going to enjoy it. So make it, share it with a friend, enjoy it just for you, knowing that it’s nourishing your body and soul. Even it it’s just for us, or for me to share with you, it’s so worth it xox
Red Lentil, Tomato & Veggie Soup
Ingredients
Serves many
1tbs Extra Virgin Olive Oil
1 onion, diced
2 carrots, diced
2 zucchinis, diced
1 red capsicum, diced
4-5 stalks celery, sliced
1 cup red lentils
1 head broccoli, chopped
2 tomatoes chopped
1tsp cumin
1tsp sweet paprika
Sea Salt to taste
1 litre Veggie Stock (approximately)
1cup tomato Passata
Directions
1. Heat 1tbs Olive Oil over medium heat in a large pot. Add the onions, red cap, carrots and celery, sauté until onions are translucent and veggies have softened. Add the Lentils and spices stirring occasionally for a few minutes.
2. Add the tomato Passata, mix well to combine. Pour in the stock, add the tomatoes and broccoli, stir to combine. Lower flame and simmer for 20-30 minutes, or until veggies have softened and cooked through. Season with Sea Salt to taste. I love to serve alongside Roast Veggies for dinner or enjoy on its own anytime xox
