The clever thing about this nourish bowl is it acts as a double agent. You may think it’s the vitamin E and good fats from the avocado, almonds and olive oil, or the anti oxidants and nutrients from the blueberries, pomegranates, broccolini and kale that are working to heal, brighten and nourish your skin from the inside out. And correctly so. But, it’s the act of actually stoping and sitting down to this bowl of goodness, taking a few minutes just for you, that also works wonders on mind, body and soul. The Beauty Fix Nourish Bowl

Ingredients
Serves 2
2 cups cooked quinoa
3-4 kale leaves, torn from stem and finely shredded
1 bunch broccolini
1tsp olive oil
Himalayan Pink Sea Salt
1tsp Sumac
2tbs slithered almonds (lightly toasted – optional)
3-4tbs pomegranate seeds
2 handful blueberries
1/2 avocado, sliced
1tbs olive oil
Juice of one lemon
Extra Sumac and Sea Salt for sprinkling
Directions
1. Heat 1tsp olive oil in a medium sized skillet, add broccolini and cook for 3-4 minutes, season with sumac and sea salt and continue to cook until slightly charred. Remove from flame, set aside.
2. In a large mixing bowl, add the kale, massage with lemon juice until it begins to wilt and turn a vibrant shade of green. Add the slithered almonds and cooked quinoa plus 1tbs olive oil and a sprinkle of sea salt to taste. Mix well to combine.
3. Divide the kale mixture evenly between two serving bowls. Top each bowl with broccolini, pomegranates, blueberries and a side of avocado. Dress the avocado with a squeeze of lemon juice and an extra sprinkle of sea salt and sumac. And voila, you’ve just nourished your skin from the inside out xx
